I love cooking with pumpkins and this is the best time of year with Thanksgiving in the air and Halloween.
But I did not want to do a pie…so I went in search of pudding recipe. Looks so yummy. Will do it Thursday for guests coming for dinner since its an easy quick dessert to pop into the oven.
- 2 cups pumpkin purée
- 3/4 cup light brown sugar, packed
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/2 teaspoon salt
- 3 eggs, slightly beaten
- 1 cup heavy cream
- 3/4 cup milk
Blend all ingredients; pour into a buttered 1 1/2 quart casserole. Bake at 350 for 55 to 65 minutes or until a knife inserted near center comes out clean. Cool and garnish with dollops of whipped cream or whipped topping.

Well I made it last night for my guests….and it was a well received success!
Humm…excellent suggestions. Thanks Conor
Sounds delicious! Might be nice to garnish with some toasted pumpkin seeds and maybe some brown sugar?
