This one is definitely not for everyone. And I have to admit I have gotten various results depending on the quality of the fish. But with a good fillet you will get a very intriguing dish that is really out of the ordinary! The balsamic vinegar and just a touch of a hot spice really make the dish.
Pan Blueberry Salmon
per person
1 salmon fillet
1 tbsp olive oil
1 tbsp balsamic vinegar
1/3 cup blueberries
salt and pepper to taste
chili flakes or other hot spice to taste
- Heat oil in pan
- Add balsamic vinegar and fillet. Cook fillet, top down, about 4 min
- Flip fillet, top up, and cook about 4 min
- Add blueberries to the pan next to fish and cook 1-2 min till blueberry start to fall apart
- Flip fillet, top down, over berries. Lower heat and cook until done
- Flip pan over plate and sprinkle with salt, pepper and chili
- Serve with a salad and rice perhaps
Ev, I have never seen salmon prepared with blueberries but it looks and sounds so unique and it’s certainly lovely! I’m going to have to try this one!

Evelyne…I have sort of a tiny problem when I see recipes with berries. Why???…because there are usually not enough left over for me to get them into a recipe…I’m sure you’re not surprised ;o)
At times…they do make it into desserts…however, yet, not once (at least to my recollection) into a savoury dish.
Hubby and I try to have salmon at least every week or so…hence, I will think of your slightly adventurous recipe the next time I manage to keep a few berries…control…control…who said life is easy ;O))

I love the combination of blueberries and fish. We do canoe camping in areas where we can usually find blueberries and can usually catch a fish. (Usually perch or trout, I think.) When we find the two together, the hubbie bones the fish, stuffs it with butter and blueberries, wraps it in buttered foil, and the cooks it over the fire. Very yum.
This is certainly one of the most unusual salmon dishes I’ve ever seen! But hey, why not?
