Fig Chia Jam


  • 3 tbsp chia seeds
  • 1 1/4 cup water
  • 1 1/2 cup figs chopped
  • 3 tbsp sugar
  • 1/4 tsp lavender buds


  • In a bowl mix together the chia seeds and water. Let sit for at least 30 minutes to form a gel, stirring with a whisk occasionally to prevent clumping.
  • Place the chia seed gel in a blender or food processor container along with the remaining ingredients.
  • Pulse a few times until just combined. Place jam in the refrigerator overnight before serving. Store in the refrigerator for up to a week.
