I did something really stupid! When I came to comment on the blogs in my RSS Feed I clicked delete all by accident. Oops. So if I normally comment on your blog but have not since Thu it is do to my error. And concerning my personal problems from last week 2 out of 3 came out with good results. The last point is bad, nothing I can do but deal with it…which I am. Thank you so much for all your support! xoxox
So I went to this new gourmet shop located right downtown Montreal recently, called Fou d’Ici (translates to Crazy from here, as in local products). At the media launch night quite a few companies selling there goods were their pushing their products. Of course sample bites were everywhere. My friend yanked my arm (figuratively) to this dried mushroom producer to taste cookies. Mushroom cookies! Sweet mushroom cookies! And they were one of the best cookies I have ever eaten. Turns out the company, Myco Sylva, has the recipe on their site.
I knew I had to make these cookies at home ASAP. The recipe is published in French so I translated it. Now the original recipe called for chanterelles but I recently did my first harvest of Oyster mushrooms from a growing kit I won over at Tasty Trix. bet you did not expect a sweet recipe Trix ha ha? The mushroom change yielded just as fantastic results. I added an egg yolk since my mixture was not holding together after following the recipe. Weird, but the egg yolk did the trick.
OK I can still hear your disbelief in this recipe. But trust me they are the best shortbread cookies EVER. I fed these cookies to two unknowing friends, both gave raving reviews and both dropped their jaws when I told them what was in it. Try them fearlessly!
Ξ Oyster Mushroom Shortbread Cookies Ξ
1 cup 2 tbsp flour
1/4 cup oyster mushroom, dried and powder till coarse
pinch of salt
1/2 cup butter, softened
1/3 cup sugar
1/4 tsp vanilla extract
1 egg yolk
Directions
- Mix the powdered oyster mushroom and salt with the flour in a bowl. In another bowl beat the butter, sugar, egg yolk and vanilla extract.
- Add dry ingredients and mix until you get a big ball of dough. Shape into a cylinder, wrap in plastic wrap and chill for at least 30 min.
- Preheat oven to 350 ° F or 180 ° C. Cut the cylinder of dough into slices. Bake 12 minutes. Makes about 25 biscuits.
I’d love to try this recipe. I have frozen fall oysters (Sarxomyca serotina) which are not “true” oysters. Do you know the oyster specie that grew in the kit?
I posted this 8 years ago, I do not remember the species. But I do remember the cookies were delicious 🙂
The theme of your blog is very beautiful and the article is written very well, I will continue to focus on your article.
Wow. They sound bizarre but I believe you! Such an interesting combination of ingredients.
Wishing you a very Merry Christmas and fabulous New Year Evelyne!

Sorry I have been so behind in my blog reading lately!! No I certainly did not expect you to make cookies with your mushrooms, lol!! Very original use for them. : )
Mmm these do look good. I guess they were amazing as there was none left last time I saw you, which was a few days after you made the recipe. I think I will try to make this recipe for my dad, a former mushroom-addict. Thanks!

If you are curious I highly recommend you try these…amazing.
The taste, well is a hard cookie but buttery and rich. Kind of like a denser sugar cookie too.
Sweet mushroom cookies…how shocking. But I LOVE the sound of them! I just have a question, can you describe what they taste LIKE? I mean, apart from mushroomy… please, I’m so curious! LOL.
Glad to know that you’re doing better :).
Sorry about your feed. These are very intriguing. I would so love a taste.
Mushroom in cookies, I can’t imagine out how it could taste like. I love eating mushrooms.
Mushrooms in cookies! What a fab idea!
I would have run away from these, as mushrooms are one of the foods I avoid, but more because of the texture than the taste. But now I’m curious. Not quite curious enough to make them, but …. they do look good.
Glad things are looking up for you!
I’m so trying to figure out the taste. I would never think of using mushrooms.
I cant even imagine how good this is. I’ve never had mushroom in cookies before and now i must! thank you for sharing this.
I have no difficulty believing these cookies are awesome – but then, I love mushrooms in everything!
VERY interesting! I love shortbread way more than cookies, and I love oyster mushrooms…but never think of putting them together! Wow, I see a lot of recipes that intrigues me, but this is by far the most interesting one!
I LOVE IT! Mushroom shortbread! Many might think ‘ewww’, but it’s sort of ‘umami’, the deep earthiness of a mushroom combined with flour, sugar and butter. I’m dying to taste! I love that you took this idea and ran with it!
I love the idea of savory oyster mushroom cookies, very neat!
FEED MEEEEEEEEEE!!!!!!
Glad some things are working out and sorry about your feeds…
These cookies are just delightful, such an intriguing flavors combination…love it!
These are so unique! Love it.
HMMM… generally shortbread cookies are not my cup of tea… BUT like you, the idea of mushrooms in a sweet dessert is intriguing. you did the company proud. Need to start pondering how I can make this more chewie
Hope everything is going well with your personal life. 🙁
I’ll have to pass on the oyster mushroom cookies in the meantime. 😛
This sounds unusual but I take your word for it that its delicious. I guess the mushroom flavour blends in quite well
You might be the first blogger ever to post a mushroom cookie 🙂 But I believe you when you say they are wonderful…and I would certainly try a few! Glad things are looking up…good news~
