I went to a what was suppose to be a apple picking party last Saturday…..without apples. But have no fear! We found our way into the pumpkin patch to select our own pumpkin and other squash. Personally, I really enjoy it and I love to cook in the fall squash dishes. I got a spaghetti squash, a butternut one, an acorn and a medium pumpkin. What do you do with them:

Spaghetti: cook it in oven or micro-wave, open and use flesh as pasta with tomato sauce…yumm!

Acorn or butternut: cook and mash with maple syrup, salt, nutmeg, pepper and walnuts..delish!

Got a big squash or pumpkin…get a load of this idea. Cut the top of, empty the innards. Put all ingredients of a favorite stew recipe and go heavy on the herbs and spices. Place the cap back on and cook the whole thing in the oven at 350 for 1h30 to 2hrs depending on your squash. Now serve it out of the squash on the dinner table. It makes for an amazing presentation and you can scrape some of the flesh to serve. Just keep the walls thick enough so it does not collapse or make a whole in the skin.
