Fennel, Grapefruit and Shrimp Stir-fry

Ingredients

shallots
minced
2
fennel bulbs
trimmed and thinly sliced
splash of olive oil

pound
shrimp/prawns
cleaned and deveined
1
bunch baby spinach
sliced
2
grapefruits
peeled and segmented
4
scallions
cleaned and thinly sliced

T
soy sauce
Instructions
Heat olive oil in a large, flat-bottom pan. Cook the shallots and fennel until softened and beginning to caramelize.
Toss in the shrimp and cook until they begin to turn opaque.
Add the spinach leaves and cook until just wilted.
Remove from heat and season with soy sauce.
Stir in the grapefruit and scallions.
