Mix the mashed potatoes, salt, and vanilla in a bowl with a wooden spoon. Gradually add the icing sugar until you get a soft dough that also holds together.
Knead the dough for a bit on a work surface dusted with icing sugar until it feels like pie crust dough. On parchment paper, roll out the dough into a 10 x 8-inch rectangle.
Warm up the peanut butter in a microwave just a bit so that it can be easily spread evenly over the dough. Sprinkle the chopped Medjool dates evenly.
If you are making a pinwheel, roll the dough into a cylinder log on the 10-inch side. If you want to make a square log, cut on the lenght the dough into even strips, and stack them, making sure to place the potato dsideup for the last strip.
Wrap your log with the parchmin paper and chill in the refrigerate for 1 hour. Unwrap the log and cut into twenty 1/2-inch slices.
