Poor Man’s Dinner

So a couple of weeks back some friends of mine (yes all Cheap Eatz members) were invited to J’s house for a poor man’s dinner. What a great idea!

The hightlight of the evening was J’s main meal recipe, an invention created by her uncle a long time ago when he was a bachelor learning to cook for himself. He entered the recipe in a Kraft Dinner contest and won. His recipe was officially printed, years ago, on a recipe index card. I was given permission to reprint this recipe. Warning, this is not gourmet but its good stick to the ribs cheap home eating.

Poor Man's Dinner

Bill’s Famous Kraft Dinner

INGREDIENTS:

1 box KD
1 pound medium (NOT lean) hamburger meat
3 tablespoons ketchup
1 tablespoon HP Sauce
1 teaspoon mustard
1 teaspoon Worcestershire Sauce
1 pinch of salt
½ lb Velveeta Cheese
1 teaspoon of minced garlic, if desired

Salt meat. Mix meat, ketchup, mustard, HP and Worcestershire sauces together (with minced garlic, if desired) and make into 4 patties.

Broil meat in 8” x 8” cake dish while cooking KD on stovetop.

Cover meat with slices of cheese and then fill the cake pan with prepared KD.

Cover all with Velveeta slices, sprinkle black pepper abundantly over the cheese and return to broiler until the cheese is melted and lightly browned.

Serves 4 sophisticated diners or two piglets.
