Haters will be Lovers

Now I hated Brussels sprouts when I was a kid. That is because my mom boiled them to death like everyone did back in the 70s along with every other vegetable. Now I like them roasted in the oven. When I came across this recipe I was very intrigued yet skeptical. Well, it was a hit. And it has been a hit several times when I brought this salad to pot-lucks. I even get requests to bring it again to the same hosts.

This Apple Brussels Sprout Salad with a Maple Citrus Dressing is basically a twist on the traditional cold slaw. But instead of cabbage, we use Brussels Sprouts. No cooking needed. In fact, this is one of the quickest salads you can make. You can double the ingredients and bring it to a party, or make only a 3rd of the recipe for a quick lunch salad for one.

You can use a knife or a grater to prep your veggies but the tool of choice here is definitely mandolin. For the Brussels sprouts use the flat blade only. For the apples and onions, use the widest shredder blade that comes with the kit. Using cut resistant gloves that prevent finger cuts and slicing is also a great idea.

It is also a fun prank salad. Just serve the Apple Brussels Sprout Salad with a Maple Citrus Dressing to your guests and ask them to guess what is in it after you get the rave reviews. I guarantee you will hear the jaw drop of all the Brussels sprout haters at the table.  Haters will be lovers…to their disbelief.

Apple Brussels Sprout Salad with a Maple Citrus Dressing

Ingredients
  

  • 3 cups Brussels sprouts shredded
  • 1/2 onion sliced finely
  • 3/4 red apple julienned with skin
  • chopped almond walnuts or pecans to taste, optional.
  • 1/4 c orange juice
  • 1/4 c olive oil
  • 1/8 c apple cider vinegar
  • 2 tbsp pure maple syrup
  • 1/4 tsp nutmeg
  • dash of salt and pepper

Instructions
 

  • Add the Brussels sprouts, apple, onion and chopped nuts to a salad bowl.
  • Combine the remaining ingredients in a small bowl and whisk well.
  • Toss the apple Brussels sprout salad with the maple citrus dressing before serving.
