Punschtorte, an Austrian Punch Cake

The Punschtorte is a classic Austrian cake with a big boozy punch! A thin cake sandwiches a rum punch filling, and finished off with a thick pink fondant icing.

No one knows for sure the origins of this Punschtorte cake but it may have been introduced to Vienna in the Middle Ages by the Ottoman armies some time during the 17th century. The components include cake crumbs, chocolate, rum, apricot jam, citrus juices. It is a kick-ass cake! Individual pastries are known as Punschkrapfen.

Vodka Gimlet and French Toast for the Mad Men Series Finale & Giveaway

Tripping back to the 60s with French Toast à la rum and Vodka Gimlet, a retro breakfast spread – cocktail included, for the Mad Men Series Finale!

What does it mean if you’re a man and you wear a hat in Mad Men? What concert is obliquely responsible for Peggy’s haircut? How many secretaries has Don had over the course of the show? Bert Cooper has a giant painting from which renowned artist hanging in his office? And why does Betty hate her neighbour? If you know the answers to any of the questions, you are for sure a hard core Mad Men fan.

Caribbean Rum Cake with Coconut

Although we always say ‘no gifts’, it is kinda nice ans sweet when someone brings you a little something when out celebrating your birthday with friends. And sometimes a little something can reveal itself to be a big experience. During my last birthday my friend Lisa gave me a small boxed Tortuga Rum Cake with coconut. It was really unexpected sentiment but so appreciated.

I knew of these cakes but I had never tried them. OMG it was so freaking awesome, perhaps one of the best cakes I have ever tasted in my life. Just soaking in rum! So for once, when the Creative Cooking Crew’s October theme – cooking with spirits – was announced, it was a no brainer decision: I had to recreate my own Caribbean Rum Cake with Coconut.

Blackberries Three Ways: a main course

Pick one fruit or vegetable and prepare it three ways. These were the directives we were given for this month’s Creative Cooking Crew challenge. Since it is summer there is no shortage of options. The tough part is actually picking that one ingredient.

My original idea was blueberries but I could not find nice ones in my neighborhood (I am embarrased to say) but I saw some lovely blackberries. I have always found them to be so mysterious and I would say they picked me! For an extra challenge my three recipes componse the main course. No desserts here. My menu consists of a pizza, a salad and of course a refreshing cocktail.

Raspberry Minteato for Berrylove

Even with my broken wrist in a cast I really wanted to participate during the #berrylove month. So I came up with this simple summer cocktail. Sorry short text..I have only one hand to type with. I am also taking one handed pics.

This is a cross between a Raspberry Iced Tea and a Mojito, I call it a Raspberry Minteato

Ξ Raspberry Minteato Ξ

2 cups of brewed tea
1/2 cup sugar
1 cup  raspberries
1/8 cup lime juice
12 mint leaves
8 ounces rum
1 1/2 cup club soda

Bring 2 cups of water to boil and brew the tea for 5 minutes. Discard tea bags. Add sugar and stir until dissolved. Cool tea to room temperature. Muddle the raspberries, lime juice and mint in a pitcher. Add rum, cooled tea and club soda to the pitcher and stir. Serve in a glass with ice. Makes 1 liter approximately.
