Oyster Mushroom Shortbread Cookies

I did something really stupid!When I came to comment on the blogs in my RSS Feed I clicked delete all by accident. Oops.  So if I normally comment on your blog but have not since Thu it is do to my error. And concerning my personal problems from last week 2 out of 3 came out with good results. So I went to this new gourmet shop located right downtown Montreal recently, called Fou d’Ici (translates to Crazy from here, as in local products). At the media launch night quite a few companies selling there goods were their pushing their products. Of course sample bites were everywhere. My friend yanked my arm (figuratively) to this dried mushroom producer to taste cookies. Mushroom cookies! Sweet mushroom cookies! And they were one of the best cookies I have ever eaten. Turns out the company, Myco Sylva, has the recipe on their site.

I knew I had to make these cookies at home ASAP. The recipe is published in French so I translated it. Now the original recipe called for chanterelles but I recently did my first harvest of Oyster mushrooms from a growing kit I won over at Tasty Trix. bet you did not expect a sweet recipe Trix ha ha? The mushroom change yielded just as fantastic results. I added an egg yolk since my mixture was not holding together after following the recipe. Weird, but the egg yolk did the trick.

OK I can still hear your disbelief in this recipe. But trust me they are the best shortbread cookies EVER. I fed these cookies to two unknowing friends, both gave raving reviews and both dropped their jaws when I told them what was in it. Try them fearlessly!

Ξ Oyster Mushroom Shortbread Cookies Ξ

1 cup 2 tbsp flour
1/4 cup oyster mushroom, dried and powder till coarse
pinch of salt
1/2 cup butter, softened
1/3 cup sugar
1/4 tsp vanilla extract
1 egg yolk

Directions

  1. Mix the powdered oyster mushroom and salt with the flour in a bowl. In another bowl beat the butter, sugar, egg yolk and vanilla extract.
  2. Add dry ingredients and mix until you get a big ball of dough. Shape into a cylinder, wrap in plastic wrap and chill for at least 30 min.
  3. Preheat oven to 350 ° F or 180 ° C. Cut the cylinder of dough into slices. Bake 12 minutes. Makes about 25 biscuits.
