Crisps Fish and Veggie Chips

A healthier take on the classic Fish and Chips, I baked a chips-battered fish and accompanied it with baked veggie chips!

It’s Food ‘n Flix time again! In this monthly group a host picks a movie of their choice that pertains to food. Everyone watches the movie and then makes a recipe which the film inspired. It can be any recipe you want. This month’s pick is hosted by Heather from girlichef and she challenged us watch The Goonies! And this month I am also combining my post with the monthly Creative Cooking Crew group with this month’s theme: “a fish n’ chips makeover, take it some place it’s never been before”.

So what is a girls that just started watching her calories to do with 2 calorific inspirations? Find a healthier twist of course! The resulting creation: a baked Crisps Fish and Veggie Chips

Two unexpect-egg cocktails: Green Tea and Apple Harvest Sours

You will crack in love for these two sour egg cocktails which are topped with a frothy egg white foam: Green Tea and Apple Harvest Sours.

The concept of using eggs in a cocktail may sound odd but you will love for the frothy white topping and the protein you will get from a boozy treat. Egg cocktails are nothing new, the most classic one being the Pisco Sour. Here are 2 modern drinks; a nice refreshing one with the taste of green tea and another with crisp notes of fall with apples.

Looking for a bit to eat with these luscious drinks? Here is an unusual quick recipe that will please the taste buds: Banana Cheddar and Cinnamon Pinwheels. Find it at the end of the post.

A Cake Reconstruction

I am sure most bloggers want their first real post of the new year to be sublime, an impressive display, a creation to evoke jealousy in other food blogger (said jokingly of course). Well not I, nope, I bring you leftovers! But I am not doing it because I want to, I swear, it is the fault of the Creative Cooking Crew hi hi.

Our first theme for 2015 is: Repurposing Leftovers or How Many Meals Can You Get From One. I went with repurposing. I actually hosted the 25th (family) and the 31st (friends) but both were pot-lucks. Lots of leftovers but small quantities of things that did not necessarily mesh well. So I decided to layer up slices of desserts! I bring you A Cake Reconstruction!

Coconut Cream Pie

I have been getting weird and intense food cravings lately. I usually hold off on them for a while, see if they pass. But the Coconut Cream Pie craving, a pie worthy of my childhood memories, I could not shake off. I recall a very young Evelyne having this pie on a regular basis at the now-gone local restaurant of the village where our cottage is (yes we still have the cottage…59 years in the family). I also had lots of grill cheeses, jello cups and rice pudding at the 48 Nord restaurant.

It took about 2 months for me to get around to actually making the pie but it was so worth the patience. It was even better than I could imagine. I know this is not a typical holiday dessert but it is definitely a crowd pleaser. So for this month’s Creative Cooking Crew challenge – bringing new ideas for the American Thanksgiving dessert table – I though my Coconut Cream Pie was quite fitting. Enjoy our last challenge of 2014 and we’ll be back with more in the New Year.

Raspberry Granita and its Warm Sauce

I have the most adorable story to tell you. I have a new boyfriend. He is 7. We met on the bus while I was playing a game on my phone on Tuesday. He asked me over for a playdate to play Connect 4 and Skylanders. And I had to ask him what Skylanders was. I was getting the extend description version but had to get off the bus at my stop. He proceeded to tell me approximately where he lived. I told him we would hopefully meet on the street soon and then go play. His mother and the other passengers around had smiles and were muffling giggles from how cute this whole thing was.

Roasted Tomato Jam

One thing I do miss about living in an apartment is not having a garden. In my late teen I took over a section of my parent’s backyard to grow vegetables.Only one problem: I do not have a green thumb. But still it is a fun and relaxing activity. now I have a herb garden and still no green thumb. I did try to grow a tomato plant in a big pot for 2 summers. It was not a big success.

It’s a shame because one of the great pleasures of summer gardens is fresh juicy tomatoes. And it just so happens to be the them of this month’s Creative Cooking Crew challenge. And of course to do something different! So get your fish, chicken or even breakfast toast out for my Roasted Tomato Jam.
