Deep Fried Coke with Sour Cherries

The Behind the Curtain Dessert Challenge is all about baking and making sweets. Every month we are given two required ingredients to work with. This month it was Coca Cola and Cherry. Yep soda, pop, cola, coke. A though one indeed. Then inspiration struck. Let’s try the crazy sounding Deep Fried Coke that is served at fair and carnivals. And to complete the requirement I just tossed in some chopped cherries. The result are nice puffy beignets of Deep Fried Coke with Sour Cherries.

Baked Pumpkin Chocolate Oatmeal

The Behind the Curtain Dessert Challenge is all about baking and making sweets. Every month we are given two required ingredients to work with. This month it was Pumpkin and Cream Cheese. With Halloween just around the corner pumpkins are very seasonal. It is squash season! This month I present you with an unusual recipe, taking oatmeal and a roasted pumpking to create a dessert: Baked Pumpkin Chocolate Oatmeal.

And this happens to be my 800th post! I cannot wrap my mind around that.

Blueberry and Shaker Lemon Pie

The Behind the Curtain Dessert Challenge is all about baking and making sweets. Every month we are given two required ingredients to work with. This month it was Blueberries and Lemon. Two awesome fruits that pair so well. Lemon desserts are so summery and refreshing. Blueberries are gorgeous little blue gems that I adore. I wanted to showcase them separately but in one dessert. So I did sort of a half-half stacked pie with my creation: a Blueberry and Shaker Lemon Pie.

Coconut Lime Tofu Pudding Verrines

Salted Dulce de Leche Pretzel Thumbprints

I have been baking a lot less in the last few years and I am trying to get back to my kitchen roots slowly. A great  motivator is a group called The Behind the Curtain Dessert Challenge which is all about baking sweets. Every month we are given tow required ingredients to work with. This month it is pretzels and caramel. What a salty sweet combo!
