Let’s have a Friday quickie! Here is a nice little recipe that you can prepare in a flash. Great for a weekend BBQ as an appetizer. Never thought I would be grilling an avocado and it was quite a revelation. The Grilled Avocado Stuffed with Salsa will be a guaranteed hit!

I found this recipe when preparing my menu for my dad’s birthday. Everything was to be made on the barbecue, even the salad…but except the dessert lol. This appetizer was a big hit with everyone.

Although you can use a prepared salsa it is much better to make a quick one on your own. I just cut up some tomatoes, a slice of jalapeno, shallots, garlic, a touch of sugar and salt, olive oil and some lemon juice. I was out of cilantro but I chopped a Kaffir Lime leaf to put in the salsa. And freshly chopped shiso leaves to finish for decoration.

Grilled Avocado Stuffed with Salsa

Servings 6 appetizers

Ingredients
  

  • 3 ripe avocados
  • 2 tablespoons olive oil
  • 2 limes
  • 1 cup fresh salsa
  • kosher salt
  • cilantro chopped (optional)

Instructions
 

  • Cut the avocados in half lengthwise and remove the pits. With a finger cover the cut portion with a bit of olive oil. Squeeze half a lime over the avocados. If you are preparing them ahead of time place the avocados side down on the plate and refrigerate.
  • Over a medium heat grill the avocados for 3-5 minutes, until you have a grill line.
  • Spoon the avocados with some salsa, sprinkle sprinkle with the salt and cilantro (optional).
  • Serve with lime wedges.
