No potatoes for me! Because potatoes is the main food of choice in this movie.  We were asked to watch the film The Martian and make an inspired recipe. And I knew most people would do potatoes. Got nothing against them, but I would loose points for my infamous crazy idea loopy creative reputation. So I came up with an ice cream.

Marshmallow Ice Cream & How Social Media Saved my Ass

Marshmallows are not just for campfires in the summer. Oh no! They can also be mixed in with your coolest estival treat to become Marshmallow Ice Cream.

Here is a new unusual ice cream to add to my long list of exotic frozen treats. Marshmallow ice cream reminds us of camping, summer, lakes and all that good stuff. Marshmallow ice cream also evoke scary story telling around the campfire.

Therefor I am taking this post hostage to recite my scary spooky urban tale (the story is scary, not were I live as people have misunderstood) where two friends answered my bat signal for help in the middle of the night. Also we could not have have come out victorious without all of today’s modern technology. And so the tale begin….

Not Yo Mama’s Neapolitan

Nothing beats the summer heat like a Neapolitan frozen treat. Yonanas comes to the rescue with a healthy fruit “ice cream” which will also be kind to your bikini line.

It’s really summer and it is officially frozen dessert season here in the Northern Hemisphere. As you all know I am a huge fan of ice cream but I have been watching what I eat and when I look at the calorie count of ice cream…yikes. That does not mean I will completely deprive myself of ice cream pleasures but for everyday treats finding a healthier alternative is a huge step in the right direction.

Maple Hickory Ice Cream with Buttered Pecans

I can cutting it short to the last minute on this one, it will be a short post, but I was inspired by an item on the foodie neighbor’s menu … with my twist of course … Maple Hickory Ice Cream with Buttered Pecans.

Japanese Red Bean Ice Cream

Yields Makes 1 quart

Japanese Red Bean Ice Cream
Save Recipe

Ingredients

  • 2 cups coconut cream
  • 1 cup almond milk
  • 2 tablespoon tapioca syrup (can substitute brown rice flour)
  • 2/3 cup sugar
  • pinch salt
  • 1/2 cup almond milk
  • 1 1/2 tablespoons tapioca starch
  • 1 1/2 cups Sweet Red Bean Paste

Instructions

  1. In a medium-sized saucepan, boil the coconut cream, almond milk, tapioca syrup, sugar, and pinch of salt. Remove from the heat.
  2. In a small bowl, whisk together the 1?2 cup almond milk and the tapioca starch. Add the red bean paste and blend. Pour the mixture into to the saucepan and whisk vigorously. Bring to a simmer, stirring constantly for 5 minutes.
  3. Strain and chill completely. Freeze using your ice cream maker’s instructions. Allow to set in the freezer for a couple hours before serving.
